Of course, you can also enjoy a good glass of wine and delicious snacks at the Food market. And who knows, you might bump into your favorite chef. In 1953, Abraham Kef opened his store on Marnixstraat in Amsterdam. Abraham Kef was a pioneer. A flamboyant cheesemonger and a storyteller with a great passion for raw milk cheeses from small producers. Following in his footsteps, Marike van der Werff now manages the store on Marnixstraat. Today at Fromagerie Kef we still work a lot with raw-milk, French cheeses, but now also with various local makers. In the end, it is products with a special story and a unique taste that make us most happy. And precisely those stories and flavors can be heard and tasted during this edition of the Low Food Festival.
621 Ferments
Flavorings
Have the joys, not the burdens. With the flavorings from 621 Ferments, give your favorite meals the deep flavor of garum (fish sauce) that only chefs can make. But right out of a bottle. Merijn and Maarten are chefs at restaurant Choux in Amsterdam and produce their garums sustainably by fermenting deliberately chosen natural ingredients, for example from beef and mushroom waste streams. Stop by and support their mission for more natural flavor and less food waste.

Charcuterie
Koji Greens is a project they are particularly proud of at Bistro Flores in Nijmegen, and we are also proud to have them at our festival! They have developed charcuterie from vegetables such as turnip, carrot, parsnip, radish, beet and rettich. These are roasted, pickled, fermented with Koji fungus for 3 days and aged for 4 weeks. The result? A vegetarian charcuterie board brimming with umami and kokumi. This is what you want to taste.

A delicious piece of Japan in the Netherlands can be found at Dutch Wasabi, founded by Sander van Kampen. He traded in his office life for the garden sector and is now the first in the Netherlands to grow wasabi, myoga, shiso and ginger. Working closely with his farmers, he uses sustainable cultivation methods to guarantee the highest quality. It's certainly not easy. But as a true pioneer, Sander does nothing more than deliver unique and flavorful products that surprise and inspire people.

With all that delicious food at the Food Market, of course, comes tableware. Therefore, we are very happy and proud that Milou Broersen is coming to show how handmade porcelain can enhance your dining experience. In her Amsterdam studio, the tableware is made daily using Bauhaus principles and modern architecture from the 1920s as inspiration. Minimalistic, made to be used and a beautiful picture on the table. Stop by and you'll never want to eat from another plate again.

Wakuli is derived from wakulima: farmers in Swahili. Because it all starts with the coffee farmers. They need to be rewarded for the quality they deliver so they can make a good living from their coffee and future-proof their businesses. To do that, they need access to market information and they need to be able to invest in their business. In short, our goal: independent, profitable and future-proof coffee farmers. At Wakuli, coffee farmers are paid well, the planet gets more love and you drink the very best coffees. That's what we call really good coffee.

For example, he was a contestant on Celebrity Masterchef, organizes BBQ battles and is a culinary entrepreneur. Surinamese sausage rolls, hot sauces, gin, vodka and more. The man doesn't turn his hand to it. During this edition of the Low Food Festival you can taste everything at his stall. Our smiling chef friend will be there to explain everything in person.

Coffee made from dates? Yes! Meet Rahaf and her inspiring story at our festival! After undergoing surgery in 2013, she faced dietary restrictions and desperately needed essential nutrients, such as dates. Normally, the seeds of dates are discarded, both by consumers and in manufacturing processes. But Rahaf, who has nothing to do with waste, soon discovered that these kernels are full of benefits. She decided to make a drink from the kernels, but the wars conflicts in her home country of Syria made this seem impossible. Now, years later, Rahaf and Tamim have made her dream come true and launched Daffee in the Netherlands.
